Indian Hotels Company (IHCL), India’s largest hospitality company, announces the launch of its first flagship Soulinaire restaurant in Alibaug, Mumbai. Soulinaire, IHCL’s signature lifestyle catering brand, now finds a permanent home on the Alibaug boardwalk, bringing a vibrant new culinary destination overlooking the Arabian Sea.
Over the years, Soulinaire has evolved into one of India’s most sought-after culinary curators. From orchestrating large-scale events across the country to hosting the most coveted private celebrations and intimate home gatherings, it has become a name synonymous with creativity, craft and celebration.
Today, Soulinaire carries forward that legacy of warmth and artistry with its first flagship restaurant — a space reimagined for Alibaug’s easy, sun-drenched rhythm, where the spirit of hospitality meets the soul of the coast.
Mr. Somnath Mukherjee, Executive Vice President, West and Head of Food and Beverage- IHCL, said, “Soulinaire represents IHCL’s commitment to delivering elevated and immersive gastronomic experiences. From its inception as a bespoke catering service, it has grown into a brand synonymous with innovation, craftsmanship and warmth. The first flagship restaurant in Alibaug embodies the brand’s philosophy of thoughtful hospitality and culinary artistry.”
Soulinaire Alibaug isn’t just a restaurant — it’s a coastal escape that begins the moment you step off the ferry. You’ll hear it before you see it: laughter, clinking glasses and music rolling in with the tide. Perched on the boardwalk and overlooking the Arabian Sea - this 200-seater, two-storey destination reimagines seaside dining with a seamless blend of alfresco elegance and indoor comfort.
The ground floor opens like a postcard stretches into a breezy terrace and a cool, air-conditioned interior. Floor-to-ceiling windows frame uninterrupted sea views, while handcrafted fans spin lazily overhead. A striking circular bar anchors the space, inviting conversations that begin with “just one drink.” Sunlight dances off the indoor pool, adding a touch of tropical indulgence to the relaxed coastal vibe.
The first floor shifts the mood with bamboo, jute, and sun-washed brick setting the tone for a private banquet space that’s part tiki bar, part coastal chic. At it's heart is a live kitchen and focal food counters that draws you in like a stage. A wraparound balcony opens to panoramic views that make time stand still making it a perfect space for intimate gatherings and grand celebrations, all bathed in the amber glow of the elevated bar as the sun dips below the horizon.
From cocktails on the deck to comfort food by the pool, Soulinaire is built for the good life with a menu that reads like a mixtape — nostalgic, new-age and designed to match every mood.
The experience begins with a drink in hand — cocktails that feel like stories waiting to be told. The Alibaug Sling blends gin, cherry liqueur and pomelo into a sunset-hued sip that tastes like holiday beginnings. The Mai Tai layers white and dark rum with orgeat for a tropical twist that lingers like laughter on the breeze. For something
sparkling, the Aperol Spritz and Limoncello Spritz bring effervescence and citrus to the table — light, bright, and made for golden hour. The Cherry Blossom Highball is a floral flirtation of whiskey and cherry bitters, while the Espresso Martini turns caffeine into charisma. And for those who like their stories bold, the Sunset Negroni — with coconut fat-washed Campari — is a slow sip that tastes like the sea meeting the sky.
Mornings open easy with eggs done your way — Akuri that tastes like old Bombay, Poha with the zing of sev and lemon, Thalipeeth with butter melting in slow motion, and Vada Pav that somehow tastes better by the ocean.
As the day warms up, the Small Plates make their entrance — Paneer Tikka Tacos with a desi wink, Masala Croissant Bhaji that’s pure rebellion, and Bombay Bruschetta because why shouldn’t toast have attitude? There’s the Murgh Angara Bites for the bold, Tandoori Pomfret for the purists, and Cajun Fries for the “just-one-more” crowd.
The Alibaug Comforts hit like a love letter to the coast — Misal Pav with a kick, Bombil Fry shatters on the bite, Jheenga Masala thick with coconut and memory and Kaju Ussal creamy enough to make you forget what you were saying. Gaoran Kombdi Rassa brings the spice, Mutton cha Kalvan the slow-cooked drama — all paired perfectly with traditional bhakri or kolum rice, depending on which way your nostalgia swings.
And because not all comfort is local, there’s the Asian lane — Honey Chilli Potatoes, Sichuan Chicken and Shaoxing Drunken Fish, the kind of dishes that turn “just one drink” into dinner plans.
Then comes the Tartines and Pizzas, where Europe goes beachside — Avocado Tartine with feta and sunlight, Beetroot & Goat Cheese that looks too pretty to eat, BBQ Chicken Tartine that’s pure flirtation. Or maybe it’s pizza night — Four Cheese, Peri Peri Paneer, Pollo or Pepperoni that wins every argument.
For the romantics, there’s pasta — Fettucine Truffle Alfredo that smells like a secret, Prawn Marinara that tastes like a sailboat dream and Spaghetti Bolognese that means business.
No story at Soulinaire ends mid-sentence — it crescendos into dessert. The Molten Choco-Walnut Symphony is pure drama: gooey chocolate, warm walnut brownie, and a fudge-filled core that melts hearts. The Tantalizing Tiramisu Twist layers mascarpone, Biscoff and salted caramel in a swirl of elegance. For those chasing joy in every bite, the Caramel Lotus Cloud delivers vanilla popcorn, lotus biscoff, and caramel sauce in a sundae that tastes like golden hour. The Dubble Trubble Delight brings Belgian chocolate and Oreo together in a riot of rainbow sprinkles, while the Café Coast Delight blends Irish coffee and sea salt into a scoop that feels like a seaside secret. At the live ice-cream bar, flavours like Sitaphal Yuzu, Royal Paan, Tender Coconut, and Vivacious Vanilla Cherry turn every scoop into a memory — part theatre, part nostalgia, all joy.
By sunset, the bar becomes Alibaug’s social switchboard — signature cocktails, spiked Irish coffees, and that perfect orange-hour view that belongs on postcards. Kids playing boardgames, couples sharing fries, and playlists gliding from chill to dance.
Sundays mean brunches with laughter that lasts all day, and on weeknights, it’s where you’ll bump into half your ferry crowd again — still here, still smiling. Because at Soulinaire, time isn’t measured in hours, but in how many rounds you’ve had.
With its mix of flavour, flair, and fun, Soulinaire is Alibaug’s heartbeat. A space where the sea is close, the playlists are better, and every table tells a different story. Whether it’s your first stop, your last stop, or the best hours in between — Soulinaire is where Alibaug comes alive. So…..
