LONDON, JULY 2 2025: Taj’s prestigious Indian restaurant, Quilon, in the heart of the iconic Taj 51 Buckingham Gate Suites and Residences, London unveils a reimagined space and an evolved culinary journey. Awarded a Michelin star since 2008, the restaurant has been a beacon of refined Indian dining in the UK.

The refreshed Quilon brings the spirit of South-West coastal India to the heart of London. Grounded in coastal flavours and shaped by modern technique, the menu features vibrant, spice-rich dishes — from exquisite seafood to delicately spiced meats and flavourful vegetarian plates — all designed to be shared. Long-loved dishes such as Seafood Moilee and Malabar Lamb Biryani are joined by new creations like Baked Black Cod and Oyster’s Three Ways.

Chef Sriram Aylur said, “Guided by regional roots and shaped by seasonal ingredients, our menus blend signature favourites with contemporary interpretations. From the spice-laced kitchens of Karvar to the coconut-rich coasts of Kerala, our menu reimagines regional depth with contemporary flair — balancing bold flavour with freshness, finesse, and a deep respect for every ingredient. At Quilon, we’ve always cooked with the past in our hearts and the present in our hands. This next phase reflects that — familiar, yet full of new stories waiting to be told.”

Quilon’s refreshed interiors, designed by Atelier Wren, pay tribute to India’s southwest coast with a calm, beach-inspired palette and rich cultural detailing. Slatted ceilings, terracotta brick floors, and hand-painted palm frond wallpaper by Kerala-based artist Anila evoke coastal architecture, while rattan chairs and chestnut-red tiles are a nod to regional heritage. Artisanal touches like bronze counters etched with Cassia fistula, diya-inspired lighting, and Tholpavakoothu puppets ground the space in authenticity. A 16-seat private dining room, crowned by a brass marigold installation, offers an intimate and elegant finale.

Quilon’s return is a deeper expression of its essence. A place where every detail tells a story, and every dish is a tribute to the timeless spirit of India’s southwest coast.
