Chef Puja brings Purani Dilli’s recipes to Tamra

 (New Delhi,  November 2025) – Shangri-La Eros New Delhi, in collaboration with Chef Pin, presents an evocative Delhi-6 vegetarian showcase at Tamra from 6 to 8 November 2025. This three-day culinary journey brings the flavours, stories, and nostalgia of Old Delhi to the fore, through an all-vegetarian spread that reimagines the capital’s most beloved street foods and heirloom preparations. Every dish embodies the essence of Purani Dilli, where recipes are guarded traditions and taste is an inheritance.

At the centre of this experience is Chef Puja Bansal, whose roots trace directly to Delhi-6. A graduate of the Institute of Home Economics, DU, she transformed her childhood fascination for food into a professional pursuit as a home chef. Having grown up amidst the sounds and scents of Delhi’s bustling alleys, she learned the subtleties of authentic Baniya vegetarian cuisine from her Nani and mother - absorbing both their recipes and their reverence for slow, soulful cooking.

Chef Puja’s repertoire celebrates the classics that define Delhi-6’s culinary legend - from tangy chaats and crisp savouries to vegetarian Mughlai delicacies and traditional sweets. Her dishes bridge memory and mastery, translating the humble brilliance of street-side favourites into refined dining experiences that capture the warmth and complexity of Old Delhi’s kitchens.

Over three days, Tamra becomes a living reflection of the city’s food heritage, with rotating menus that unfold Delhi’s diverse vegetarian traditions. Signature dishes include Kachhe Kele ki Tikiya, Shahjani Angoori Kofta, and Dum Aloo Akbari, complemented by live counters serving Matra Kulcha and Nagori Halwa Aloo. The spread is anchored by traditional breads such as Palak Poori and Bedmi, alongside raitas, Methi ki Chutney, and Amrood ki Launji, each adding depth to the plate.

Every menu reveals a new facet of Delhi-6’s culinary character-featuring delicacies like Kuliya Chaat, Daal Shahjani, and Pakori Pulao, followed by desserts that weave nostalgia and indulgence, including Gulab Firni, Pineapple Shahi Tukda, Malpua, and Jalebi. The buffet experience encourages leisurely exploration, offering everything from comforting lentils and seasonal vegetables to richly layered koftas and fragrant rice dishes that speak of a cuisine shaped by time and tradition.

Available for lunch at INR 3500 plus taxes and dinner at INR 3800 plus taxes, this experience at Tamra offers genuine Delhi-6 cooking rarely presented in fine dining settings. The celebration provides an access to Old Delhi’s legacy, with three distinct menus ensuring variety and depth throughout the event.
