25th October 2024 - On Thursday 31st October, Atlantis, The Palm will welcome the social dining and bar concept, Studio Frantzén. Marking Björn Frantzén’s debut in the Middle East, the restaurant will offer the Swedish chef’s critically acclaimed French-Asian gastronomy with Nordic influences, all set within a modern Scandinavian environment of effortless luxury.
Open until late, Studio Frantzén features 208 seats where diners can enjoy a fully immersive experience. Echoing the aesthetic of FZN by Björn Frantzén, every detail has been meticulously curated – from bespoke tableware to hand-painted murals, complemented by an eclectic music mix that creates the perfect upbeat energy. While the restaurant embraces a relaxed à la carte menu, it is characterised by distinctive flavours and preparations, highlighting the refined cooking techniques that Björn is celebrated for.
The restaurant boasts an atrium adorned with chandeliers and a dining room featuring cozy booths, as well as a private dining room that accommodates up to 14 guests. At the 20-seat open kitchen, diners can enjoy a front-row view of culinary mastery in action. For those seeking a late-night drink, the 40-seat bar offers a selection of Nordic-oriented cocktails and spirits crafted with premium Nordic ingredients, such as rhubarb, sea buckthorn and blueberries. Meanwhile, wine enthusiasts can explore the cellar, which houses over 1,300 labels, ranging from boutique producers, and internationally acclaimed labels from 15 countries to Dubai firsts. With a resident DJ playing from Wednesday to Saturday every week, guests can look forward to arriving early and leaving late at this soon-to-be hotspot.
Taking inspiration from Frantzén’s open-flame kitchen in Stockholm, Studio Frantzén will serve both new and signature dishes ‘from the fireplace’, with ingredients sourced globally from locations such as Norway, Japan, and France. Highlights include Côte de Boeuf and smoked bone marrow with pine, rock lobster with coriander, curry, and brown-butter hollandaise, as well as the chef’s signature turbot with butter sauce, anchovy, caviar, and dill. A first for Studio Frantzén, guests will also be able to indulge in the interactive dessert room. Adorned in the brand’s colourful bear print, diners can choose from a selection of sweet treats, including cloudberry and waffles, lime and sake tart with whipped young coconut cream, and sticky toffee pudding.
The new restaurant is led by General Manager Lukas Jaktlund, who has been with The Frantzén Group for nine years and was previously part of the management team at Frantzén in Stockholm. Whilst the kitchen is overseen by Chef de Cuisine, Geoffroy Van Hasbroeck. Studio Frantzén will be one of two new restaurants opening at Atlantis, The Palm, alongside the fine dining restaurant FZN, sibling to the three-Michelin-starred Frantzén in Stockholm and Zén in Singapore.
