New Delhi, September 2023: Hyatt Regency Delhi invites you to an incredible gourmet experience at a two-day Pop Up in New Delhi, by The Bombay Canteen (Hunger Inc Hospitality), the award-winning restaurant & bar from Mumbai. Experience a Taste of India (without borders), with a seven-course meal and cocktail experience that offers the classic yet unexplored charm of our country’s diverse culinary offering marrying it expertly with familiar flavours for a truly gourmet experience.

The pop-up menu, curated by one of India’s most dynamic young chefs, Hussain Shahzad, Executive Chef, Hunger Inc Hospitality; promises the best of The Bombay Canteen’s eclectic Indian fare that has won rave reviews, with critics and gourmands alike. Mark your calendars for September 23 (Dinner) and September 24 (Lunch & Dinner), 2023. The seven-course dining experience with cocktails is available in both vegetarian and non-vegetarian options. The meal includes dishes like ‘Chakli Chutney’, Baigan Choka Tartlets, Chilled Seabass ‘Sev Puri’, Tomato Rasam, Corn Locho, Begum’s Baked Brie, Millet Upma, Gucchi & Girda, Squash Blossom Sansav, Dry Aged Duck Xacuti and Coffee Rasgulla Sundae along with refreshing handcrafted cocktails.

The seven-course experience featuring The Bombay Canteen’s signature dishes, presents the untold story of regional Indian cuisine. The vegetarian diner can expect to savour Chakli Chutney - a pop-up favourite featuring chakli-style cheese churros served with Schezwan chutneyBaigan Choka tartlets with pickled shallots and sesame furikake; Tomato Rasam - a bowl of chilled rasam drizzled with lime leaf oil, served with warm cheese vadas and a spicy chili chutney made with Sirarakhong chilli, sourced from Manipur. Another The Bombay Canteen favourite on the menu is Corn Locho a reimagined Gujarati steamed snack made with corn, topped with crispy corn, scallion chutney and Belper Knolle, a locally produced aged Swiss pepper cheese. The menu also features the immensely popular Begum’s Baked Brie that comes with dollops of freshly-made plum chutney with Naga hot honey, and toasted pistachios, served with Monaco biscuit-inspired baked crackers. Celebrating the flavours of Kashmiri cuisine, Gucchi & Girda comprises traditional Haak saag, whey yakhni and kohlrabi served with girda - a Kashmiri-style poppy seed bread. Also, on offer is Squash Blossom Sansav, a traditional Goan-style sweet, sour and spiced curry, accompanied by Sunday pilaf, balchow and sunchoke foogath - a vegetable stir-fry from the Sunshine state of Goa.

The offering for the non-vegetarians includes Toddy Shop Chicken Fry - inspired by the popular bar snack available in Toddy shops across Kerala; served with fried garlic and burnt chillies, and Chilled Seabass ‘Sev Puri’ with a zesty nimbu chunda, kairi chutney, and pickled chillies, to satisfy your chaat cravings. Also on the menu is the Podi B**f Tartare with a tamarind dressing, smoked egg yolk and dosa crisps; a version of the Corn Locho with Soft-Shell Crab, topped with crispy corn, scallion chutney and Belper Knolle. Mains include the Goan cuisine-inspired Dry Aged Duck Xacuti - a mélange of spices and coconut with tender, crispy 14-day dry-age duck, served with Sunday pilaf, balchow and brussels sprout foogath.

A tribute to Kolkata’s famous Rasgulla is at the heart of the signature Coffee Rasgulla Sundae, with rum-mascarpone ganache, salted caramel coffee cream, topped with toasted almond brittle.
