The fascinating culinary heritage of Kashmiri cuisine, known for its subtle flavours and aroma, is quite unmatched. From the celebratory multi-course Wazwan feast to regular delicacies, Kashmiri cuisine stands in a league of its own. The Kashmiri homemakers and chefs are known to add a distinct flavour to their food and expertly blend simple spices for that unique Kashmiri taste! Bringing this culinary extravaganza to Chennai is Chef Vijay Singh from Vivanta Dal View, Srinagar. He joins the team of chefs at Vivanta Chennai, IT Expressway led by the Executive Chef Jaffar Ali to curate a distinctive menu that captures the richness and authenticity of Kashmiri cuisine. To further elevate the dining experience, the restaurant’s décor will be adorned with attractive artefacts that recreate the splendour of Kashmir.

Chef Vijay Singh, who hails from Jammu and Kashmir, started his culinary journey at the age of 16, learning the nuances of Kashmiri home-style cooking from his mother. With 25 years of rich experience behind him, he further honed his skills under Chef Javid waza. Chef Vijay brings a symphony of Kashmiri flavours for guests at Mynt, the all-day dining restaurant at Vivanta Chennai, IT Expressway, at this 10-day Kashmiri food fest from October 12-22.

Guests can embark on a culinary journey and savour the finest Rista, served at the beginning of a meal, made with pounded meatballs and cooked in a Kashmiri gravy made with mawal extract, asafoetida, fennel and other spices; the aromatic Mutton Rogan Josh, cooked in just ginger, asafoetida and fennel gravy with no onion or garlic, and served with Kashmiri zafarani naan; the rich and subtle Rajma made with small kidney beans and served the pulao; and the exquisite Gushtaba, meatballs cooked in a tangy yogurt gravy. Guests can also relish the flavourful Kashmiri PulaoWaza Chicken and the delectable Badam aur suji ka halwa.
