Dedicated to fostering global awareness towards the rich heritage of Kashmir, Nalini & Surender have embarked on a journey to take Kashmiri cuisine & culture to the world and make it a part of the top cuisines on the global palate. Recently, Chef Nalini was honored with the 'Emerging Leader' award by MSME, Government of India. With over a decade of experience, she has established Matamaal, a distinguished regional cuisine restaurant, and a global e-commerce platform for Kashmiri spices called Kanz & Muhul.

The experience, open for dinner, allows patrons to experience the rich tapestry of Kashmiri cuisine, with selected ingredients foraged from the valleys and hills of the state. With Kehwa being served throughout the day, guests can either indulge in an a la carte menu or experience the best dishes through a special Kashmiri thali. The menu starts with soups where guests can choose between the Haeder te Channeh Rassa, a flavourful vegetarian option featuring mushroom and chickpeas, or the Syun Rassa, a rich lamb soup with morel dressing. Vegetarian starters include delicacies like Nadur Churma, crispy lotus stem sticks, and Haeder Tuj, coal barbecued mushrooms as well as Warimuth Masaleh, which is served like salsa. Non-vegetarian options boast tantalizing dishes like Syun Tuj and Kokur Shami Kebab and the mouth-watering Wazwan Syun Seekh Kebab which is a thin and expertly crafted Wazwan mutton seekh kebab cooked in gravy. Both the vegetarian and non-vegetarian starters are served with an assortment of chutneys - Ghanddeh Chetin, Mujeh Chetin, Doen Chetin, and the mint based Pudehneh Chetin.
For dessert, patrons can indulge in Kashmiri Phirni or Matamaal’s signature Kong Ice-Cream, which is topped with pistachio for crunch and dried rose petals to add a delicate texture to the dessert. Guests can also try the Shufta with ice-cream. Traditional Kashmiri teas like Kehwa and Sheer Chai are also available.
Thali options cater to both non-vegetarian and vegetarian preferences, offering a curated selection of dishes served with accompaniments like, Kanngitch Pulao, chutneys and dessert, ensuring a complete and satisfying dining experience for all guests.
