Learn how to create Modern Boutique Parisian Pastries (Level 1) with Chef Sanjana Patel

Calling all pastry enthusiasts! Chef Sanjana Patel, Co-Founder, Creative Director and Executive Chef of La Folie, will hold an intensive, Modern Boutique Parisian Pastries Class (Level 1) on Saturday, September 28, 2019.

This interactive class is designed for students who are passionate about the art of modern French pastry. Participants will learn how to create up to five different pastries, each one highlighting the unique, personal style that La Folie is known for. Using the basic fundamentals of French pastry bases, Chef Sanjana will play with up-to-date modern flavours, techniques, shapes and decorations.

On the agenda will be up to five recipes, featuring delicious pastries like Berries, chocolate, Earl Grey; Gianduja Praline, Citrus Fruits, Dacquoise; and Philadelphia Chantilly, Seasonal Fruits, Lemons. including vegetarian recipes, and substitutions for certain ingredients. Participants will learn how to create mousse-based desserts and high tea cakes, the techniques of mirror glazing and texture colour glazing, chocolate garnishes, cocoa butter spraying, dessert assembly, and techniques for both home and commercial use.

This class will take place on Saturday, September 28, 2019 from 10 am to 6 pm. A light lunch and refreshments will also be served, during the course of the day.
