- Mix maida, salt, baking powder, baking soda and sugar in a bowl. Add curd, and some water to this mixture and start kneading.
- Lightly brush up the dough with water and cover it.
- Leave the kneaded dough for 2 hours.
- Then, once again knead the flour to make it softer.
- Make small balls from the kneaded flour dough.
- Mix nigella seeds on the ball.
- Take one ball at a time, and roll each into a small-sized kulcha on a rolling pan.
- Pre-heat the Tava and place the kulcha over it.
- Cook one side partly till it gets light brown.
- Flip and cook the other side. Apply ghee/oil on both sides while cooking.
- Make all the kulchas in this way and serve hot.
Aloo and Paneer Kulcha can also be prepared in this way. The only additional step is to add the stuffing of aloo and paneer and cook it (just like you do in parathas).
