Fresh Mango Red Quinoa With Avocado Salad

  • 55gm :- Fresh mango dice cubes
  • 30g :- Red Quinoa
  • 45g :- Avocado dice cubes
  • 30g :- Fresh Pomegranate seeds
  • 5ml :- fresh Lemon juice
  • 6ml :- Extra-virgin olive oil
  • 5ml :- lemon Vinaigrettes dressing
  • 5g :- Chevre cheese
  • 2g :- Garlic chives ,fresh parsley
  • 20g :- Red onian & tomato fine chop salad

Salt and freshly ground black pepper to taste

  • Ø Garnish with fresh edible flower, Asparagus Saving , And micro greens
    • Mangoes: Do use Ripe but firm mangoes for making this salad taste amazing.
    • Add all the dressing ingredients to a bowl large enough to fit the mango and avocados.
    • Use a spoon to gently combine the mango salad ingredients together until coated.
    • Place Red quinoa in a fine wire-mesh strainer; rinse under running water 1 minute. Drain. Bring Red quinoa, 1 3/4 cups water, and salt to a boil in a saucepan over high. Cover and reduce heat to medium. Cook until liquid is mostly absorbed, 12 to 15 minutes.
    • Remove from heat, and let steam, covered, 10 minutes. Drain any excess cooking liquid.
    • In a large bowl toss together the cooled quinoa, pomegranate seeds
    • Add finely chopped chives and parsley
    • In a large serving bowl, whisk together vinegar, lime juice, salt and pepper to taste. Slowly whisk in oil. Toss in mangoes, avocado and Pomegrante seeds to coat. Serve immediately.
