Mango Fiesta special at Six Senses Vana

Mango and black rice, coconut reduction, raspberry, and beet sauce.

Ingredients

For sweet black rice

· 100 gm black rice

· 35 gm jaggery powder

· 250 ml water

· 80 ml coconut milk

· 400 gm mangoes

For strawberry and beet sauce

· 30 ml beetroot puree

· 100 ml strawberry puree

· 25 gm sugar

· 1 no vanilla bean, split

· 1 gm pectin

Instructions

For sweet black rice

· Wash the black rice six to seven times with cold water.

· Boil the water and add black rice.

· Cook till the black rice is tender.

· Add jaggery powder and cook till all the water is absorbed.

· reduce the coconut milk to half.

· peel and dice the mangoes.

· Take a round ring mold put the chopped mangoes on the base and on top place the black rice.

· Pour reduced coconut milk on. Top.

For strawberry and beet sauce

· Puree the beetroot and the strawberries.

· Pour them into a saucepan.

· Place the saucepan on medium heat and start to cook them stirring continuously.

· Add sugar and the extract of vanilla bean.

· Keep on cooking till the mixture starts coating the spoon.

· Add pectin mixed with a bit of sugar.

· Remove from heat and allow it to cool.

· When it has cooled down store at 5c in a container.

Aam Panna

Preparation time: 25 minutes

Serving: 4

Ingredients

· 2 medium sizes raw mango · 2 teaspoons roasted cumin powder

· 1 tablespoon kala namak (black salt)

· 20-30 ml jaggery syrup

· 4 cups chilled water

· A handful of fresh mint leaves

Instructions

1. Wash and clean mangoes and roast them in a preheated oven at 160 °C for 15-20 minutes. (Can also be steamed for 20 minutes if not roasted).

2. When done allow the mangoes to cool down completely. Using a spoon, scoop out the pulp from mangoes and get rid of the seed.

3. Now add black salt, roasted cumin powder, jaggery syrup, mint, and chilled water to the pulp and blend well using a hand blender.

4. Garnish with a mint sprig and serve chilled.

Ingredients

· ½ cup mango pulp.

· 1 small mango cut into big dice

· 1 tsp. chia seed.

· 1 banana for a smoothie

· ¼ cup mint sprigs.

· 2 tbsp. gluten-free muesli

· Instructions

· Take mango and banana and make a puree using a blender.

· Now pour the mixture into a serving bowl, and arrange diced mango on top, along with gluten-free Muesli. Garnish with a sprig of mint, sprinkle some chia seed on top, and serve.
