Mumbai’s Culinary Gem - Masque is coming to Hyatt Regency Delhi to serve Delhi’s gourmet lovers

New Delhi, 22nd November’22 – Delhi, gear up: Mumbai-based restaurant Masque pops up in the capital later this month, serving up their signature ingredient-driven tasting menus over 3 days at the Hyatt Regency Delhi, from November 25th to 27th.

Founded by entrepreneur Aditi Dugar in 2016 and helmed by Head Chef Varun Totlani, the restaurant serves seasonal 10-course tasting menus that highlight homegrown ingredients and modern Indian food. Ranking this year at #21 – and as the best restaurant in India – on Asia’s 50 Best list, Masque works with Indian produce to bring storytelling and technique to the forefront, alongside regional flavours and local cooking methods.

Expect Chef Varun’s menu to traverse a whole lot of ground, from micro-seasonal ingredients to long-time Masque Lab projects, and royal cooking traditions to Indian household staples, starting off with a sliver of Ladakh in the form of a tart sea buckthorn pani puri, stuffed with cured barramundi. His spin on ‘khad’ cooking is inspired by a recent meal in Jodhpur: where game meat is slow-cooked in a pit underground over several hours, Masque’s version instead features saffron-marinated quail wrapped in three layers of leaf, jute and cloth, left to cook slowly over charcoal. The dish is unwrapped at the table and drizzled with a luxurious saffron sauce – and served with impossible flaky Malabar parathas in an unlikely meeting of desert and southern coasts.

Dessert is a quiet nod to India’s relatively recent bean-to-bar chocolate revolution – a base of fresh cacao fruit, lychee, gondhoraj and custard apple is topped with airy chocolate mousse and cacao nibs. The entire dish is served in otherwise-discarded cacao shells, dried and preserved here for use.

Ten courses later, the menu feels like a keen exploration of India’s diversity by a team eager to constantly learn – by no means exhaustive just yet, but a promising assurance of plenty more where that came from.

Masque will pop up at the Hyatt Regency Delhi on November 25, 26 and 27.

The dinner is priced at Rs. 8500 plus taxes without alcohol and INR 10000 plus taxes with alcohol.
