Special Dishes from French food festival Menu
1. Mille feulle de artichauts avec confiture de baies
Description: Traditionally in France Mille Feulle was started off as a savory dish using fine quality butter and flour to form the puff pastry and several local native produce were used a part of the dish . Currently Mille Feulle is more used like a dessert and the traditional one is almost forgotten.
2. Savory soufflé
Description: Soufflés are always either black forest or a dark chocolate soufflé or any dessert soufflé. Through this menu, Out Of The Blue is taking it back to old times and creating 2 savory soufflés which is, bacon and cheddar and the beet and asparagus. “The soufflé is considered to be a work of perfection and how many ever times we make it as chefs or cooks , we still are worried about the next one baking in the oven since the smallest of the error can destroy the soufflé totally” the chef mentions. It is a very challenging dish.
3. French Onion Fondue
Description: Traditionally it’s a beef broth based thick and hearty soup topped with a gruyere crusted baguette. Although, at Out Of The Blue, we are doing a vegetarian version of the same using just roasted veggies, caramelized onions and finished with gruyere
