Clare Smyth, world’s best female chef, and first female chef to be awarded the perfect 10 scores by The Good Food Guide. She has worked with Gordan Ramsey and has now started her own restaurant, Core. Smyth grew up on a farm in County Antrim and so she is close to nature and prefers homegrown ingredients to exotic delicacies. The ingredients which she uses in her dishes, she likes to source them from within a few miles of her restaurant, Core.
Core stands out for its casual luxe vibe and for being at the forefront of Modern British Gastronomy. Even the decor is minimal yet modern. Smyth’s aspirations are to strip off the layers of pretence and focus on natural ingredients for fine dining. “ There is nothing like a beautiful grouse at its peak in autumn or stunning strawberries at their height in July, How could you not be inspired?” asks Smyth.
Dishes from her menu are so pleasing to eyes. Here is one of them.
