Chef Nilanjan’s career spans leading kitchens across Mumbai, Goa, Bengaluru, Hyderabad, and Kolkata. His work has included creating authentic Sicilian specialties in a premium rooftop restaurant, curating Ligurian-inspired menus at a boutique luxury resort, and reimagining Italian classics in fine-dining settings. At every stage, he has combined traditional techniques with contemporary presentation, sustainability, and locally sourced ingredients to create memorable dining experiences.

A graduate of the Institute of Advanced Management, Kolkata, Chef Nilanjan is widely recognized for his creativity and leadership in the culinary space. His style balances rustic, soulful Italian flavors with modern flair, appealing to both purists and adventurous diners. Beyond the kitchen, he is admired for his commitment to sustainability, strong team-building skills, and dedication to enhancing guest experiences through thoughtful menu storytelling.
