Oliveto, the elegant Italian restaurant is now open as a one-of-its kind dining establishment in South Goa. With captivating pool views from its al fresco perch and aesthetically upholstered interiors, Oliveto is a true testament to the simple joys of Italian cuisine, served with heart. The restaurant pays homage to olive oil, which is a liquid elixir, one of the cornerstones of Italian gastronomy and the soul of the famed Mediterranean diet. Not only is this a taste enhancement, but also a nod to the simple wholesomeness of Italian cuisine, which often shines through its fresh ingredients.

The story behind its name
Scattered across Italy, ancient olive trees twist, wind and mesmerize. The lush canopy of branches hang heavy with abundant olives. After ripening under the warm Mediterranean sun, families and friends gather in these olive farms to harvest the olives and extract oil. It’s a beautiful tale of how communities thrive on nature and its abundance.
Design
The restaurant features rustic interiors and an outdoor terrace for al fresco dining. True to the Italian way, the atmosphere is pulsating with energy and the food is crafted with love.
Menu
The ethos of the Oliveto menu is to craft contemporary renditions of classic dishes with passion and creativity.
One could begin their journey with Insalata Oliveto, which is a medley of roasted vine ripened cherry tomatoes, red onions, smoked olives with a generous lemon emulsion. The Cavelossim Ribollita is our own rendition of the hearty Tuscan soup. The Pizzas all come with a sourdough base, which guests absolutely delight in, apart from the varied toppings. One should try the Oliveto, our version of Pizza Bianco, with olives and melt-in-the-mouth burrata. Fragrant Goan Red Rice Risotto with saffron and mascarpone is another standout dish. In the dessert section, the Panna Cotta with stewed fruits and berry dressing or the beloved Affogato al Caffe with a dash of Kahlua claim their place as winners, until one has tried the signature dessert, Oliveto, an exquisite, sweet and savoury medley of chocolate, olive oil, olives and truffled honey. A sublime ending to the meal and totally, unmissable!
A must-mention is the signature Esperienza di Punta, which aims to teleport one to the luxuriant olive farms. Guests can embark on a sensory journey through Italy with a repertoire of cheeses, tomatoes and basils paired to perfection with a rendition of olive oils, one bite at a time.
