SPECIAL
OATMEAL COOKIES

INGREDIENTS:

Unsalted butter in room temperature -230gm

Light brown sugar -200gm

Egg-2no

Flour-190gm

Baking soda – 3gm

Ground cloves -5gm

Cardamom powder-5gm

Ground nutmeg-5gm

Salt-5gm

Vanilla extract -5ml

Rolled oats-300gm

Chocolate chip-180gm

Dried Cranberries-100gm

Toasted Pumpkins-65gm

METHOD

In a mixing bowl whisk together butter and sugar.

Mix the flour, baking soda, salt, cinnamon, clove, cardamom, nutmeg and keep it aside.  

To the creamed butter and sugar mixture add one egg at a time and mix well along with the vanilla essence.

Add the flour mixture and mix well till well combined.

Add the rolled oats, chocolate chips, pumpkin seeds, and cranberries and mix well.

Cover the dough and refrigerate for an hour.

Line the baking tray with parchment paper or silicone mat.

Shape the dough and place it on the tray with sufficient gap in between bake them in 140 c temp for 80 mins.

Take it out and cool it on rack.

Serve.
