Quick & easy spread that as healthy as it is delicious!
Ingredients:
- 2 whole ripe avocado
- 1 cup chevre
- ¼ cup walnuts
- Salt and pepper to taste
- Lemon juice to taste
- Sesame and fresh dill to garnish
- Extra virgin olive oil (optional)
Method:
Dry roast the walnuts until they are warm and fragrant.
In a food processor, combine the walnut with chevre and flesh of the ripe avocados. Blitz it to a smooth paste. Season with salt and pepper and add some lemon juice for acidity.
If the mixture looks too coarse and lumpy, add a touch of olive oil to loosen up the mixture.
Transfer into a bowl and serve alongside toast and additional garnishes like smoked salmon, caper, pickled onions, dill and sesame seeds.
