Kolkata: The Westin Kolkata Rajarhat, has embarked on a journey to revisit our roots with the re-launch of Vedic. The hotel is all set to host the ‘Harmony Brunch’ at Vedic every Sunday.
As patrons enter the serene place, Vedic transports you to another age, with textured bamboo on the ceiling and walls embellished with engraved shlokas and ancient Indian art. The preserved wood flooring showcases a traditional feel with a contemporary approach.
An interactive showcase kitchen with stone façade stands in the heart of the restaurant. The vertical hydroponic garden of herbs and spices, which chefs employ to make their outstanding feast, is a distinguishing feature of restaurant.The skilled in-house culinary team has created a menu featuring the freshest ingredients of the season, encompassing three collections: spring, summer, and winter. Every meal is inspired by a distinct location and displays their culinary artists' rigorous research. Vedic, as an ingredient-driven restaurant, will serve freshly prepared meals every day, just as at home – 'HOMELY'. In align with the hotel’s philosophy to provide lasting comfort through food, beyond a quick sensory fix; there will be no use of artificial or synthetic food produce.
At Vedic, guests get to traverse the length and breadth of the country, with dishes that represent ancient cooking techniques, forgotten grains and seasonal vegetables, embodied in dishes like ‘HaritRasam’,’Chenna Roast, Torai Cutlet with BhappaAloo’, ‘Organic Seed MoongBhalle’. Minimalism and simplicity are central to the concept, as can be seen in ‘DhungariTarkari’,‘DaalVedic’, ‘KaacheGhadekaSaagserved with breads, ‘BajreKa Roti’, ‘Mushroom Kulcha’, ‘Makki di Roti’ and the ‘Vedic Pulao’.
Vedic's mixologists have created a variety of flavourful drinks based on the restaurant's central concept with a mix of ancient Indian ingredients, shrubs, spices, and artisanal spirits. Guests can choose from ‘MalabariChai’(bourbon, red wine reduction, with spices), ‘Kaumaon Cup’ (Vodka with watermelon and fig syrup, tulsi honey water, freshly squeezed lime juice and amchoor), ‘Peru Payala’ (Tequila with guava juice and chilli, fresh lime juice and vedic masala), and many more. An interesting dessert menu with items like ‘PuranPoli’ (chana dal and coconut stuffing, Mishra mawa, saffron foam), ‘LahoriGajjar’ (caramelized sweet potato with edible gum choorma) and many other ‘healthy’ sweetmeats like, ‘Berry Phirni’, ‘Aamras’, ‘SonawarkiBarfi’ offer a befitting end to the lavish spread
