Trèsind Mumbai, the multi-award-winning & critically acclaimed flagship of Passion F&B, is ready to reignite your senses with its New Menu, one that showcases gastronomic artistry. Rooted in the philosophy of constant evolution, this menu promises a captivating exploration of regional flavours harmonised with the essence of the winter season.

Headed by Chef Sarfaraz Ahmed, the menu embraces the warmth and diversity of India's culinary landscape, inspired by the flavours of winter. Each dish narrates the tale of a different region to create a comprehensive and enchanting journey. From the southern spice to the flavours of Central India, the menu traverses across the map, offering a taste of the country's rich heritage.

Both the Chef’s Tasting Menu and The Degustation Menu, have undergone a transformation with locally sourced ingredients, indigenous flavours, modern techniques and international influences. 

The warmth of winter takes centre stage in this menu and it gracefully incorporates elements such as milk products, root vegetables, and whole grains, among others.  A standout in the Chef's Tasting Menu is the creative use of celeriac, forming a unique wheel that adds a touch of innovation to the experience. Additionally, it showcases the flavours of Goa with dishes like Crab Cafreal and Ros Omelette paired with Xacuti Curry. This curry is a Goan speciality typically prepared during the winter season, and the team at Trèsind has elevated this dish by accompanying it with Tender Coconut Kimchi, drawing inspiration from winter practices in Korea. The inclusion of Kimchi is significant, as it is traditionally prepared during winter as a means of preserving vegetables during harsh conditions. When it comes to bread, the menu features Pao and Luchi, adding a comforting warmth to the overall dining experience. These selections have been thoughtfully chosen to complement the theme, offering flavours that resonate with the season.

Throughout the menu, the philosophy of innovation and modern techniques is evident. From transforming the regular South Indian Mendu Vada into a waffle to creating Espuma, (characterized as air or foam) from Zeera Aloo, Kaju Katli and Mint Chutney, to fermentation method for a couple of dishes like, coconut kimchi and black apple ice cream.  

The desserts evoke nostalgic winter street-side memories from the northern part of India. The cherished memory of bustling scenes outside sweet shops, where large cauldrons of milk continuously simmer with an array of enticing flavours is recreated on the plate, featuring delightful treats such as Imarti, Kaju Katli Espuma, and Malai. Another dessert creation in the Degustation menu includes Mulayari Payasam with Black Apple Ice Cream and Dark Chocolate. This dish is a tribute to the authentic flavours of Kerala, featuring Mulayari, also known as bamboo rice, paired with a scoop of black ice cream. The tartness of the ice cream complements the sweetness of the payasam, creating a delightful contrast.

Indulge in the decadence of Legacy-1789, a blend of Elijah Craig, calendula seeds shrub, chocolate bitters, and hazelnut cordial. This timeless creation pays homage to the rich tapestry of flavours, promising a sip that echoes through the ages. Relish the sweet nostalgia of Déjà vu, featuring Glenmorangie Signet, homemade cookie syrup, and an indulgent hazelnut-whisky dipped chocolate cookie. This creation is a sensory journey, evoking memories of the past while embracing the luxuries of the present. Lastly, surrender to the allure of Capriccio, a bold amalgamation of Mirabeau gin, fresh green apple, passion fruit puree, tajin, sriracha, and a spirited finish of passionfruit and capers soda.
