Singapore Sling: Masque x Euphoria x Labyrinth: A six hands dinner

Chefs LG Han and Jason Tan head to Mumbai for a six hands dinner with Chef Varun Totlani  at Masque, in collaboration with Stranger & Sons Gin.  

Singapore’s -finest descend in Mumbai next week for a six-hands collaboration at Masque:  restaurants Euphoria and Labyrinth, helmed by Chefs Jason Tan and LG Han respectively,  join forces with Chef Varun for a tasting menu featuring each of their signature styles.  

The trio cooked up a storm at Labyrinth in Singapore in July this year; now, the same team  brings  the  experience to  Masque,  where  the  dinners  will  be  held  on  21-22  October.  Between  the  restaurants,  cooking styles  span  the  spectrum  from  new  Singaporean,  modern Indian, and Gastro-Botanica – each standing out in their distinct kind and -lavour, 

yet all coming together in a cohesive menu that -lows easily between sensibilities.  

With  his  restaurant  Euphoria,  Chef  Jason  Tan  introduced  the  world  to  his cuisine of  ‘Gastro-Botanica’: a philosophy that places botanical elements in innovative forms at the  fore,  celebrating  them  as equal  protagonists to  proteins.  Tan  is  the  -irst  and  only  Singaporean  chef  to  be awarded a Michelin  star  four  years in a  row; the  restaurant is  currently ranked at #25 on the list of Asia’s 50 Best.  

At  Labyrinth, Chef  LG Han  focuses  on new  Singaporean  cooking, inspired  by  his  vivid  memories growing up there. The food here ignores stereotypical constraints of hawker or  -ine-dine, as well as that of traditional Singaporean cuisine. Just as at Masque, Han instead  assigns  primacy  to  ingredients  and  -lavour  pairings  instead,  bringing  back  to  life  old  recipes and forgotten techniques. Labyrinth has retained its Michelin star since 2017, and  now stands at #11 on the list of Asia’s 50 Best. 

Masque head chef Varun Totlani has spent his year at the helm of the kitchen exploring different  pockets  of  Indian  cuisine,  combining  them  in  unlikely  pairings  that  are  surprising yet nostalgic. “We had an amazing time together cooking in Singapore - I think  the menu manages to showcase each of us individually yet cohesively, and you can sense  the fun – and friendship – on the plate. We’ve been looking forward to this reunion ever  since!”, he says.  

Accompanied by tipples stirred up with Stranger & Sons Gin, Singapore Sling promises to  be an epic con-luence of some of Asia’s best.
