What’s more, Sofitel Mumbai BKC is the first hotel in India to use a solution provider like Winnow, in an effort to greatly minimize food waste.
The hotel’s commitment to sustainability is deeply ingrained, thanks to the efforts of Accor (the parent company of Sofitel Hotels & Resorts), which believes that forging a sustainable future for hospitality is a key component to the overall success of the brand. To that end, Sofitel Mumbai BKC is taking daily measures to help the group reach its target of achieving net zero carbon emissions by 2050 – management of food waste being one of them.
Around 931 million tonnes of food is wasted yearly, 26% from food service. According to the World Economic Forum (2021), food loss and waste costs the global economy $936 billion a year. What’s more, a recent report from the WWF shows that food waste is responsible for 10% of global greenhouse gas emissions.
Recognizing the damage being done to the environment due to food waste, Sofitel Mumbai BKC has joined hands with Winnow, which utilizes AI-enabled food waste tracking, seamlessly recording food waste data and providing kitchen teams with additional support to drive rapid change. Winnow’s reporting pinpoints waste areas in the kitchen that can immediately be targeted to reduce food wastage. Data-driven decision making means more control in the kitchen and less over-production; the comprehensive analytics and food waste photo logs help brands capture 100% of their waste stream.
