Shangri-La’s – Eros Hotel, New Delhi invites its patrons to indulge themselves in the newly launched Alba white truffle menu at the award-winning Italian Restaurant, Sorrento, hand-carried by our new Italian Chef from the Alba region of Italy.

O​riginating from the picturesque northern Italian hills near the city of Alba, White Truffle also known as “Trifola d’Alba Madonna” meaning truffle of the white mother is the most highly esteemed of all known varieties of truffles. They are extremely scarce which highlights the exclusivity and mystique that resonates with this particular ingredient in the world of gastronomy.

Alba winter white truffles are primarily used uncooked to best preserve their wonderful characteristics, allowing their magnificent fragrance to waft over and envelop any dish they are served with. The menu boasts of authentic Northern Italian flavours specially curated by Executive Chef Neeraj Tyagi and newly appointed Italian Chef Pascal Sfara. The duo, together have combined their culinary skills to conceptualize a truly authentic Italian white truffle menu.

Begin your meal with an appetizer of your choice from the antipasti section, which offers Seared sea scallops, white Alba truffle cream, cauliflower and lemon oil, Alaskan king crab in light hollandaise sauce, Basque Chili and sliced Alba white truffles, Tenderloin tartar, Truffle mayo, puffed polenta with anchovy perfume and more. Following the antipasti section, is the Primi Piatti featuring Homemade tagliolini, 36 month aged Parmesan and white Alba truffle, Chestnuts ravioli filled with porcini mushrooms, light porcini broth and white Alba truffle, Creamy’ Vialone Nano’ risotto with Parmigiano Reggiano and shaved white truffles among others.

 The menu further offers two signature dishes as a part of the main course, Grilled Lamb rack, cauliflower mousse, red wine onion, oysters, stewed leeks and white Alba truffle and Meuni’ere Dover Sole fillet, baby spinach, hazelnut, activated charcoal and white Alba truffle.

To culminate the experience of this remarkable Italian journey, the menu features delectable desserts such as Truffle Panna cotta, rum figs, raspberry sorbet and white truffle scented chocolate foam, cappers, crunchy sweet bread, mandarin sorbet and edible flowers.
