Villa Bistro, Della Resorts  hosts a special Italian Extravaganza with Maestro Chef Matteo Arvonio

Della Resorts is bringing the globally renowned Chef Matteo Arvonio to India to curate an exclusive Wine Dinner experience on 10th February 2023. 

Sprawled over 4000 sq. ft with alfresco seating, Villa Bistro is an uber-luxurious Italian restaurant with eloquent design aesthetics inspired by the Parsi Gara embroidery with a unique touch of Dior’s Toile de Jouy animal patterns, and a breathtaking ambience with live artists and for a captivating vibe. Keeping up with the brand values of offering bespoke services, Villa Bistro is set to elevate your dining experience with an exquisite Wine Dinner, where Chef Matteo will be seen curating a special 4-course menu that brings to your plate the regional flavors of Italy. 

Chef Matteo has 25 years of experience in curating chef-d’oeuvre. His association with renowned brands such as Relais & Chateaux and Cafe Armani Restaurant has awarded them several accolades for “Best Italian Restaurant”. Influences from around the globe can be recognized in Chef Matteo’s amalgams. The menu will showcase his skill at refining original recipes with creative presentations and modern cooking techniques. Kick start with a delightful bite-sized Amuse bouche consisting of “Gnudi” of asparagus and ricotta, gazpacho sauce, Parmesan tuile. The first course on the menu is the  Antipasto with a  veg option of Burrata, avocado cream, candied tomatoes, crispy quinoa, and non-veg option of Prawn ceviche, avocado cream, candied tomatoes, crispy quinoa. To whet your appetite, the second course features a Roasted pumpkin risotto, with pecorino cheese, mushroom Guazzetto, pistachio followed by culinary masterpieces in the form of a third course consisting of Slow-cooked Chicken breast stuffed with duck, and caramelized spring onion, Passito wine jus or Zucchini, eggplant and smoked provola Parmigiana, spinach pesto to choose from. The fourth and last course for the evening is the heavenly Gianduja chocolate mousse, hazelnut crumble, grappa-scented zabaglione

Italian cuisine is deficient without wine and to complete the ensemble for the evening, a mix of Indian and Italian wines to pair with the courses will be hand-picked by Luca Bernardini, a consultant at the Indo-Italian Chamber of Commerce and Industry (IICCI). To jazz up your experience, the evening will also witness enthralling acts by artists and live entertainment in a picturesque setting around the ornate water fountain creating a memorable experience.
