HospiBuz: What motivated you to pursue patisserie over law? Would you like to pursue law in future? Being such a talented chef and having magnificent culinary skills did you ever think about the food and beverages law?

Related imageChef Dinesh Patel : I love law and I am an academic person. But at the same time I’m very creative too and I love letting my imagination run wild and that’s what patisserie allows me to do. I wouldn’t say that I chose patisserie, its more like patisserie and baking chose me although I completed my studies whilst simultaneously running my patisserie business I was fortunate that when I graduated my business was up and running enough for me to make it my career path. No I can’t say I ever thought about food and beverages law I’m too creative to get into the legality of food products I’m just happy designing and baking.

HospiBuz: Please tell us about Couture Confection! What motivated you to start your own patisserie in London and how have been your journey so far withCouture Confection? What are the signature dish and your all-time favorite dish of Couture Confection?

Related imageChef Dinesh Patel : Couture confection is an artisanal patisserie where grand, attention grabbing, personality filled cakes and confections are a way of life. Run by me in London. Passion is at the heart and soul of every CC creation. CC aims to provide products that not only look amazing but taste amazing too, we pride ourselves on the best possible ingredients, quality and freshness. Our ingredients come from all over the world with nearly all of them being sourced personally by me. Inspiration for our designs, come from all walks of life; culture, art, architecture, literature, history and fashion making CC’s cakes unique in every way.

CC is the product of my immense passion and enthusiasm for food and patisserie and my love for all things creative and couture. My Indian heritage and hunger for world cuisines has meant that couture confections menu and variety reads like a world map, with influences from the four corners of the world.

CC always aims to deliver the best possible product. Our bakers and staff are devotees of all things sweet and are true craftsman, ensuring that every sweet treat, every flower, every pearl and every drop of gold leaf is meticulously and perfectly placed. Couture confection prides itself on catering to their customer’s needs, whatever they may be. Our bespoke services ensure that even your wildest confectionary fantasies can be brought to life. From miniature patisserie perfection to towering beautiful cakes cc has a solution to all your sugary needs.

I started couture confection because I thought that there is a gap in the market for what we at couture confection do, we fuse the east with the west in our desserts and create cakes that are memorable and definitely attention grabbing. I’ve been very ambitious and entrepreneurial from a young age so starting something of my own was always a dream of mine.

HospiBuz: What difference do you find in the eating habit and taste buds of Indian and people of London?

Related imageChef  Dinesh Patel : In India I feel like we love our sumptuous wholesome flavors and we are all very passionate about food, every Indian is a foodie to me who loves fresh good quality food whether that be in a dhaba or fine dining, In London we are so busy sometimes that we overlook what we eat at times. I love that people in India always make time for good food and even fast food is always of amazing fresh quality in India.

HospiBuz: In your opinion, what is the best opinion/ advice you have got from the accomplished and most talented judges of Masterchef?

Related imageChef  Dinesh Patel : When Chef VikasKhanna gives us any comments in the kitchen he always enthuses us with such confidence and hope, his opinions always spurred me on.

HospiBuz: Which is your most favorite dish prepared by some other Masterchef contestant?

Related imageChef  Dinesh Patel : When Samantha Barrett made her sugar free honey panna cotta I thought it looked and sounded beautiful.

HospiBuz: Could you please tell us how do you see yourself now in comparison to the person you were before participating in Masterchef? What change do you find in yourself now?

Chef Dinesh Patel : The way I look at food and think about food has definitely changed. Before the competition at home we often don’t think about plating technique or flavor combinations as much but in the competition that was a necessity, now I think much more out of the box. As a person masterchef has definitely given me a confidence boost I didn’t ever think I would be good enough for a platform like this but masterchef and the judges have shown me that I am good enough, this experience has given me a lot of support.

HospiBuz: Which is your all-time favorite dish prepared by you in the show?

Related imageChef Dinesh Patel : For me I loved the cake I made on children’s day I thought it looked and tasted really good.

HospiBuz: Your hand was in patisserie back in London and in Masterchef you had to prepare other dishes as well, did you ever face difficulty in doing that?

Related imageChef Dinesh Patel : Not really because although I love and enjoy making desserts I enjoy creating savory dishes too and its good to push yourself out of the comfort zone.

HospiBuz: What is your future plan, after the Masterchef, would you like to settle in India or London and follow your passion of cooking?

Related imageChef Dinesh Patel : Masterchef has really brought me back home to India again and I definitely think India will now be a big part of my future, I have plans to launch a book soon so I can share the experiences of this journey with everyone as well as that I can’t wait to bring my London patisserie to India. I think couture confection has a lot to offer and I cannot wait to show that to all of India.

HospiBuz: You are one of the youngest contestants in Masterchef, does the age matter in this industry? Or there is nothing in front of passion and handwork?

Related imageChef Dinesh Patel : Age is something I’ve always had to deal with in the industry especially as I started my business at such a young age. People often think that age equates to experience but that’s not the case. Passion and hardwork will always shine through though and that’s the main factor in any industry.

HospiBuz: Could you like to share a moment where you were very touched in the show and it will always remain as sweet memory?

Related imageChef Dinesh Patel : Its actually not just a moment, but its from behind the scenes of the show, Samantha, Mirvaan and myself became the closest of friends during this journey and I will cherish them and all the sweet memories we made together for all of my life, the bond I made with them made this journey all the more unforgettable.

HospiBuz: How do you define food?

Related imageChef Dinesh Patel : Not just nourishment or a necessity but a way of life and a true passion, a way we can be creative and artistic while still enjoying something delicious to eat in the end.

HospiBuz: Small message to all your admirers and fans.

Related imageChef Dinesh Patel : Thank you all so much for all the love and support that you’ve given me, when I first came to India I didn’t think I would be as accepted and loved as you all have made me feel, thank you to all of you for believing in me.
