You’re self-taught Baker can you tell us when did it go from casual hobby to obsession? 

Ajitha Reddy: It was never a hobby for me to bake but I always liked the cake decorating & baking since childhood days when I used to watch it in TV and used to watch cake-related videos on youtube every now and then so had a little knowledge even though I had no experience or practice. So one day out of the blue I decided to bake when someone had posted a requirement for a small cake on a foodies group. I approached her with the same she was sweet enough to order it from me. So that was my very first order on Feb 21, 2018. It took me 2 trials for baking as I haven’t baked a cake ever before and 3 hours to ice n decorate a very very simple cake …they loved it n thanked me. So here the obsession for doing more started ever since I always research and know new things practice it & try to improve with each of my cakes and still hold the same zeal to keep bettering myself. 

You’ve been awarded as a “Best Baker in Hyderabad” so what did it feel like when you were awarded? 

Ajitha Reddy: Every award was given just felt so rewarding that my efforts were being recognised and that I was doing something appreciable today, it takes quite a lot of effort and planning to bake and decorate cakes while being a mom of 2 toddlers. Having said that, I love what I do so I wouldn’t change a thing about it. Though I got a couple more awards, the most fascinating I would say is being chosen amongst finalist of Rising Star award -South by Indian Cake Awards as this was solely for bakers. Though I have not won it I am extremely honoured to be a finalist to sharing space with such experienced and amazing artists. 

Congratulations for being the Brand Ambassador of Confect Sugarpaste and Ultimakes. Please tell us more about both the company and also about your responsibility as an ambassador? 

Ajitha Reddy: Thank you. Being a brand Ambassador is another achievement I suppose as a brand trusts it’s products and their application publicity in one. Confect is a home brand that manufactures this amazing product like sugar paste, modelling paste, gum pastes, buttercream etc. Fondant is a very important part for cake decorating, Confect enabled me to make better cakes with neater finishes. Ultimakes, on the other hand, has some amazing baking accessories & tools. Please tell us how important sugar paste and colour mix for a baker and why should bakers use products from Confest Sugarpaste brand? 

Ajitha Reddy: Sugar paste / Fondant is the most important when it comes to cake decorating as it enables bakers to open new horizons in cake decorating which whipped cream & buttercream cannot. Please describe your job in an unobvious way. 

Ajitha Reddy: Everybody thinks bakers are to bake a cake & decorate n they are done. But what’s not very obvious is that they need to wear so many more hats than just that, one needs to be an inventory manager to keep track of all things used, a planning & executive head to plan all the process ahead & make it happen, a personal relationship manager to deal with customers with all their requests, an artist to sketch things & describe and much more which remains unsaid but is done on daily basis.  

When is your favourite part of the workday and why? 

Ajitha Reddy: My favourite part of the workday is when I get to decorate the cakes & handing it over to the customer to see their priceless reactions and sweet reviews. A cake is mostly the centre of any celebration these days and making such show stoppers with finesse and adding so much attention to details & innovating to create such things each day is what makes me happy . 

Do you have any recipe or something that you create now, which makes you feel emotional when you cook or bake it?

Ajitha Reddy: I am emotionally attached to each cake i make & decorate ..so everytime i look back at anything i made I do have a emotional bond with it.. having said that I am always emotional when it comes to making cakes for kids with allergies who cannot eat regular cakes & for them I tried & tried to make decent vegan & keto options and each time I make such cakes n clients come back to say how they liked it & how much it means to them, it makes me teary eyed. 

Why food business has been your fantasy from childhood? 

Ajitha Reddy: Food in my view is the only thing that can bring people closer, good food is what a person needs for sure each and every day. I myself have been someone who enjoys good food, food shows on TV, so the passion for it seems to have started at an early age with this. But as I grew I wanted to make food that could cheer someone up, being a cake artist has made that happen and is the perfect job for me for all the right reasons.
