Baking your ideas to life

When did you first know you wanted to become a baker? 

Tasneem B R B:-My journey of baking started quite unknowingly when I used to see my sister bake and experiment new dishes, it’s that time when I started helping her out and also learning under her guidance. Gradually as days passed I started to be recognized as a baker amongst my friends and neighbours and orders started to pour in, that’s when I realized that I should be a baker and handle things professionally. 

What was your inspiration behind making the dinosaur’s cake? 

Tasneem B R B:- Well, this is interesting, my son is a huge fan of Dinosaurs and I thought why not make for him a life-size dinosaur structure cake for his birthday and see his reaction. I have been making dinosaurs every year on his birthday and also I have decided to surprise my kids with new structures. 

You’ve recently won in a cake competition, please tell about the theme and what did you make? 

Tasneem B R B:- So actually, the theme for the competition was “Carnival” and as we know carnival is colourful & filled with life and happiness I thought to try out some new techniques which I have never done before in making the cake more attractive as well as small detailing like the making a colourful tiger standing on its tail along with all edible decorations like the carnival girl, a lion with ring, a seal balancing ball, a giant wheel. Also to make it more happening I added a colourful dragon to the cake. 

Tell us about B&R Bakers? What is your favourite thing about B&R Bakers? 

Tasneem B R B:- B&R bakers aim is to provide it’s customer’s with the best quality and quantity and I keep a close eye on what my customer’s requirements are and make sure they get the best from my end. The favourite thing about B&R bakers are my lucky charms my kids whose initials are used to for the brand name also the way they handle things maturely and help me out whenever they get time, this boosts up my morale and keeps me going at all times. 

How important are edible colours for cake decoration? Which is your favourite edible colour brand and why? 

Tasneem B R B:- Edible colours are basically a tool to enhance the cake and give it a more attractive look. So the most important thing here to note is that the quality of Edible colours are very important so I make sure I use the best edible colours available. 

I personally like Poonam Maria’s intense colours. The colours can be used for various mediums in cake baking easily. And the quality is the most important factor as to why I prefer Poonam Maria’s intense colours. 

What’s one of the greatest lessons you’ve learnt in your career so far?

Tasneem B R B:- Basically, can’t say the greatest because I personally believe that every day you learn something new and that keeps me motivated & focused towards my goals. Coming back to lessons that I have learnt so far is that I make sure I follow the 4P’s of marketing i.e. Product, place, price & promotion this helps me establishing myself and building the brand. Also, I have learnt a lot from my mother how to handle extreme situation calmly and patiently because baking is all about being patient and that made me believe in myself and explore the hidden talent within myself. 

What’s your 2020 Motto and what trends do you see coming in the baking industry? 

Tasneem B R B:- My motto for 2020 is “freshly baked cakes with expertise, quality, quantity and a pinch of love”. And as I love to make structure cakes I would like to start my own workshop this year and share my knowledge with other budding bakers. 

Mithais are loved by all Indians, what is your take on incorporating mithai flavours in baked items? 

Tasneem B R B:- Personally, I’m not a huge fan of mixing mithai with cakes but due to my client’s popular demands I’ve begun experimenting and creating unique combinations. Our Rasmalai Vanilla cake has become quite a hit. 

What is chocolate to you as a baker? 

Tasneem B R B:- One should never underestimate the power of chocolate. It gets along with anything you bake and brings a feeling of happiness and joy along with its sweetness.
