Appetizing recipes direct from the kitchen of Lemon Tree

As we opt for healthier options in our food choices, prepare a feast at home with tasty yet healthy dishes like Stuffed Mushrooms and Quinoa Pancakes. Recipes by Binish Baby, Senior Executive Chef, Lemon Tree Premier Mumbai International Airport.

Stuffed Mushroom

Ingredient:

· Mushrooms 50 gm

· Butter 1 tsp

· Garlic minced 2 cloves

· Onion chopped ½

· Bell pepper 100 gm

· BBQ sauce 20 gm

· Cheese 50 gm

Method:

· Remove the mushroom stems

· Roughly chop the stem of the mushrooms and bell peppers

· Heat some oil, sauté onion and garlic till translucent then add the chopped bell peppers

· Add the chopped mushroom, salt, pepper and cook for a minute then transfer in a bowl

· Add grated cheese to the mushroom mixture and mix it well

· Stuff this mixture in the mushroom bulbs and keep aside

· In a bowl take the white sauce and mix with barbeque sauce. Add some salt and pepper then apply this sauce to the mushrooms and seal the opening with little cheese

· Bake it at 250 degrees for 15 minutes

· Serve it hot with pesto

Quinoa Pancakes

About The Dish

Dating back to ancient Greece and Rome, pancakes have been the most popular and also a sustainable delicacy. Pancakes are known to be a nutritious and wholesome breakfast, which keeps the stomach full and the body energised. There are different options such as buckwheat, oats, almond, spelt, quinoa, chestnut, coconut, gram or rice. One of my favourite preparations is the quinoa pancake which tastes amazing and looks appetizing at the same time. Quinoa is a superfood and a good source of protein.

· Ingredients:

· 1 cup quinoa flour

· 2 teaspoons baking powder

· ½ teaspoon baking soda

· ¾ cup Greek yoghurt

· ½ cup almond milk · ½ mashed ripe banana · 3 tablespoons honey · 1 tablespoon vanilla extract · 1 egg · Butter

· Fruits for garnish · Maple syrup

Method:

· Take a large bowl, add the quinoa flour, baking powder and baking soda and mix well

· In a different bowl, add Greek yogurt, almond milk, mashed banana, honey, vanilla extract, eggs and whisk all the ingredients properly

· Add quinoa flour mix to the above yogurt mix and whisk properly

· Take a pan and add a dollop of butter

· Using a spoon, pour the pancake mixture on the pan and spread evenly to make fluffy pancakes

· Cook for 2 minutes, flip it, and cook the other side as well

· You can make 4-5 pancakes and layer them on top of each other

· Garnish with fresh fruits and a drizzle of maple syrup
