Mango Salmon Crudo

Ingredients

Alphonso Mango: 1no

Smoked Salmon(Gravlax): 200gms

Olive Oil: 20ml

Italian Lemon: 1 no

Buttermilk: 100ml

Ginger (Grated & Juiced): 10ml

Dill: 10gms

Salt: to taste Puffed Black

Rice: to garnish Scallion

Oil: To garnish

Method:

1. Cut thin slices of the salmon and arrange on the serving plate. Drizzle some Olive oil and sprinkle zest of the Italian lemon

2. Peel the mango and cut half of it. Cut into strips and using a mould place on top of the salmon in a circular shape with a small well in between

3. Combine the buttermilk, Ginger Juice, Lemon juice & Salt.

4. Pour between the mango slices over the salmon

5. Garnish with dill leaves, puffed black rice & Scallion oil
