Mother’s Day Special Recipe From The Ashok Hotel: Begun Bhaja

Eggplant / Baingan Large one1 no
Turmeric Powder1/2 tsp
Roasted jeera1 tbsp
Red chilly fried05 no
Salt to taste
Mustard Oil for frying

Preparation:

  1. Wash the eggplant and wipe it dry with a kitchen towel.
  2. Cut into 1 cm thick slices.
  3. Mix turmeric powder, jeera powder and salt in a plate.
  4. Apply this mixture all over the eggplant slices.
  5. Heat mustard oil in a pan.
  6. Shallow fry in hot oil on high heat until golden brown from both the sides.
  7. Sprinkle with roast jeers and place fried red chilly on top.
  8. Serve immediately.
