With roots in families that served royal households, the three chefs (Ustaads) and experts of regional cuisine have curated this menu to celebrate the diversity of traditional Indian flavours. Centred around novel cuisines, they offer Awadhi—which pays tribute to the indigenous culture of Lucknow, Afghani—which is influenced by Persia and Afghanistan, Kashmiri—showcasing the culinary heritage of the Kashmir Valley, Bengali—originating from the eastern part of India and many more.
