Christmas pudding
Ingredients:
· Butter – 200gms
· Eggs – 1
· Brown sugar – 140gms
· Flour – 50gms
· Bread crumbs – 30gms
· Baking soda – 2gms
· Orange peel – 20gms
· Lemon peel – 20gms
· Dry apricot chopped – 20gms
· Almond chopped – 20gms
· Golden raisin – 20gms
· Black raising – 20gms
· Dark rum – 200ml
· Cinnamon powder – 5gms
· Cardamom powder – 5gms
· Clove powder – 5gms
Method:
· Mix cream, butter and sugar together.
· Add eggs one by one.
· Add flour, bread crumbs
· Soak all the dry fruit into the rum overnight
· Add all the peels and spices.
· Add all the spices into the batter.
· Put in a mould and bake at 180°C for 20 minutes in a double boiler.

· Orange peel – 225gms
· Lemon peel – 225gms
· Mixed spice powder (cinnamon, cardamom, clove) – 10gms
· Cake flour – 170gms
· Bread crumbs – 250gms
· Brown sugar – 250gms
· Soft butter – 225gms
· Whisky – 10gms
· Rum – 10gms
· Brandy – 10gms
· Mix flour and bread crumbs.
· Cream butter and sugar together.
· Add all the peels and spices to the mixture.
· Add in whisky, brandy and rum and mix well.
· Put in a mould and bake at 180° C for 20 minutes in a double boiler
Recipe Soft Ginger Bread Cookies

· Honey– 175gms
· Castor sugar – 50gms
· Oil – 30ml
· Water – 30ml
· Egg yolk – 2
· Cocoa powder – 5gms
· Lemon juice– 2gms
· Flour – 200gms
· Baking soda – 15gms
· Almond powder – 75gms
· Hazelnut powder – 75gms
· Heat the honey, sugar, oil and water. When dissolve cool well.
· Mix together the flour, ground nuts, cocoa powder and soda.
· After adding all the ingredients to make firm dough, rest in chiller.
· Roll out, cut desire shape and bake at 180° C until done.
· Bring it out of the oven and brush the top with icing sugar and liquid.
Recipe Stollen Bread
Stollen Bread
· Bread flour – 100gms
· Milk – 100ml
· Dry yeast – 15gms
· Flour – 830gms
· Salt – 3gms
· Milk – 150gms
· Soft butter – 195gms
· Sugar – 50gms
· Cinnamon powder – 2gms
· Cardamom powder – 2gms
· Clove powder – 2gms
· Raisin – 200gms
· Orange peel, lemon peel – 50gms
· Melted butter – 200gms
· Castor sugar – 150gms
· Prepare the culture by mixing flour, milk and yeast together.
· For the dough put all ingredients together except butter and knead it nicely.
· Put culture and all the spices & dry fruits and knead further.
· At last add soft butter into the dough and knead for a while.
· Proof for at least 1 & half hour.
· Bake at 200°C for 30 minutes in a pre-heat oven.
· After baking, soak it in melted butter & roll in the castor sugar.
